Gluten Free Peach Pancakes





This is quite the recipe! Another "what would happen if I did this..." kind of recipe :) 
My wonderful grandparents ever since the beginning of forever have grown a huge garden! I remember in the summers not being able to play with my cousins till our rows of beans had been weeded and gleaned of ready crop. Hated that! But what was the best, it made for great hide and go seek games, and midday snacks, especially the raspberries.

I recently went to visit my exceptionally thoughtful grandparents and just before I left brought me up a box of home canned peaches, pears, and applesauce! Score!!! So this week when I really didn't want to eat oatmeal again (a rather repetitive routine breakfast) I scavenged my pantry and fridge to pull out, a jar of peaches, goat cheese (haha I know what your thinking, it's a acquired taste for sure!) and started making pancakes!

Just trust me, this recipe actually creates a unique savory sweet meal that starts your day the right way! "But there's goat cheese on these. I thought you couldn't have dairy". Crazy thing about goat milk, for those who have dairy issues, goats milk does not contain the same proteins as cows milk so I personally can have small amounts of it! Which I enjoy because its more natural and unprocessed then the store bought nut or tofu cheeses I usually buy to save on time. It was definitely an adjustment because it has a real bold flavor, so if you just can't do it Ricotta cheese would be a delicious alternative. 




Gluten Free Peach Pancakes w/ *Ricotta Cheese 

*Goat cheese, or dairy free ricotta cheese

1 1/4 Cups Bob's Red Mill 1-1 gluten free flour blend
1 tsp Baking powder
1/2 tsp Baking soda
1/4 tsp Salt
1/4 tsp Nutmeg
1/4 tsp Cinnamon
1 Tbs Ground flax seed + 3 Tbs water
1 Cup dairy-free milk + 1 tsp vinegar (I used apple cider vinegar, white would be great too)
3-4 Tbs melted butter
1/4 tsp pure vanilla extract
3/4 Cup smashed peaches
Ricotta, or goat cheese

1. In a large bowl, sift together the flour, sugar, salt, baking powder, baking soda, cinnamon, and nutmeg.
2. In a liquid measuring cup, measure out the milk, add vinegar, stir together then set aside. 
3. Measure out flax seed and water, mix and set aside. 
4. After 3-5 minutes of waiting combine milk and flax seed, then beat in the vanilla.
5. Add wet mixture to the dry stuff, and fold gently just until combined.
6. Fold in the crushed peaches and the melted butter.
7. Let the batter stand so it can rise a bit at room temperature for 15 minutes. If the mix is still real thin after waiting, add a little more flour.
8. Preheat the skillet, drop mix onto it with 1/4 cup measuring cup. 
9. Put ya a pancake on a plate, crumble cheese on top, more peaches to the side, drizzle with syrup and enjoy the heck out of this adventurous meal :)



What if it fails? But what if it succeeds?! If your scared to fail, and avoid situations where you think you would fail, that will not protect you from failing. 
Failure is the stepping stone to success, its an experience that blends into wisdom and creates a stronger version of yourself! Just because you fail does not make you a failure. 
What about your safety? Don't you want to live? Living means doing what you love to do, and if you have to fall here and there to do what you want to do in life, then so be it. Courageously pursue what lights your souls fire, that gives your life meaning and value. 
The next time someone tells you, "You're going to fail", tell them they're right, but that you are not afraid to fail, to take action, and to take a step into the unknown. Giving up is the greatest failure. 

We all get nervous over one thing or another. We doubt ourselves and our qualifications to create a change in our life, our job, the 9 to 5 standardized way of life! But I know that we can obtain and do anything we want in this life if we will choose to learn from failure. After failing plenty of times, I've learned you can sit in your failed attempt, saturating yourself with the negativity and do nothing, or you can take a moment, catch your breath then write down your next draft. 
It's just fine if your learning curve dose not come immediately. If it takes weeks, months, or even years to bounce back let yourself take the time you need but don't be lethargic about trying again. Push yourself towards success and find joy during the journey, not just at your destination.
