Coconut Crumble Tilapia
I was so hungry today but haven't gone grocery shopping in two weeks...needless to say the pantry shelves were looking rough. So I pulled out what I had, coconut flakes, rice, fish, and a few frozen veggies. My mindset, maybe i'll use the coconut like a flour and the fish like chicken and make a "fried chicken" kind of thing. Shows you how good my brain works when i'm tired and hungry.
It actually was SO yummy! And yet again, fast and easy, as all my mid week meals are. Pack full of nutrients, covering all your bases, I dare you to try this island inspired meal :)
COCONUT TILAPIA
Ingredients:
About 3 tablespoons coconut oil
3/4 cup unsweetened coconut flakes
1/2 ish cup coconut flour
Dash of salt
4-5 tilapia fillets
2-3 eggs beaten*
1. Heat coconut oil in a skillet over medium-high heat.
2. Mix unsweetend coconut flakes, coconut flour, and salt in a shallow bowl
3. Brush egg over each tilapia fillet, then lay into flour mixture until evenly coated.
*I didn't use eggs when I was making this recipe up, which now looking online its totally a thing! But because I can't eat them I didn't use them for my serving. The coconut still stuck just not as well as with the egg. What falls off still toasts, so place it on top your fish and create the coconut crumble.
4. Slowly place fillets in oil and fry until golden brown, about 5 minutes each side.
5. Serve over brown rice and a side of veggies to balance your meal :)
ROASTED VEGGIES
Veggies of choice:
Cauliflower, Carrots, Zucchini, Yellow Squash, and Broccoli
1. Preheat oven to 400 degrees
2. Rinse then chop veggies to similar widths
3. Place on a parchment paper lined cookie sheet. Sprinkle with MCT oil, onion powder, salt, pepper.
4. Bake until lightly browned, about 12-15 minutes.
In my preparations for "JOYFREE" opening, each week i'm learning from some of the world most renowned entrepreneurs. Learning skills of how i'm going to balance a business and a family, how i'm going to be different than other companies or at least compete and stay thriving. A lot of their lessons turn the reflection towards you as an individual and fix you up before they add information about running a business.
This week the take home lesson was that self discipline and self control is the first and best victory. I always want to be having fun and never let anyone down by not being able to support them or indulge my friends with a good time. But we can always make time for having fun. To obtain the things that truly matter we need to invest our time wisely.
Our time is the most valuable thing. You can never get it back so use it wisely by setting standards and regulations you honestly live by. This ensures quality of life for you and for those you love and want to show that love to. Having self discipline within every category of life, ensures that we will get what we work for and what we need. It is a form of self love, that produces lasting joy and confidence. Do NOT fixate on the things you can't do, but what you can.
