Cilantro Lime Chicken Quesadilla



Now, I know all of us have indulged in the simplistic comfort food known as a cheese quesadilla. Quick, easy, and satisfying, it takes me personally back to childhood years. This Cilantro Lime Chicken Quesadilla is just as yummy but has way more nutrients packed into it! It gets its fancy flare with the baked lemon chicken, homemade salsa and guacamole, sauteed mushrooms, Chao Vegan Cheese, and cilantro lime rice packed in between two Mission Gluten Free Tortillas. 

Also its obvious but i'm just going to say it, the compartment recipes (the rice, salsa, guac) use them however the flip you want! They definitely can be used in a variety of other recipes. The rice goes great with basically any Mexican or Asian dish. That's whats so fun about cooking! Twist it and make it your own :) That's my favorite thing about life too. We all come so different but when we live true to ourselves, there in lies the most depth and fun to life we can create! 




Cilantro Lime Rice

Cilantro Lime Rice

  • Ingredients
  • 2 Tbps olive oil
  • 1 1/2 cups basmati long grain white rice (I used short brown rice)
  • 1 clove garlic, minced
  • 2 1/4 cup water
  • 1 teaspoon salt
  • Zest of one lime
  • 3 Tbsp lime juice
  • 1 cup lightly packed chopped cilantro, leaves and tender stems
1 Brown the rice: Heat the olive oil in a medium saucepan on medium high heat. Add the raw rice and stir to coat with the olive oil. Cook, stirring occasionally, until the rice has started to brown.
Add the garlic and cook a minute more.
2 Add water, salt, zest, then simmer: Add water, salt, and lime zest to the rice. Bring to a rolling boil, then cover and lower the heat to low to maintain a very low simmer.
Cook undisturbed for 15 minutes (check your rice package instructions), then remove from heat and let sit for 10 minutes.
Fluff the rice with a fork.
3 Stir in lime juice and cilantro: Transfer the rice to a serving bowl. Pour lime juice over the rice and toss with chopped cilantro.







Authentic Xalapa Salsa

5-6 tomatillos
1-2 jalapenos
1 clove garlic
1/4 large onion
1/2 bunch of cilantro

1. Boil tomatillos and jalapenos for 4-5 minutes (till tomatillos start to turn pink)
2. Toss into @Vitamix Blender with other ingredients still chunky
3, Add salt to taste


Guacamole 
Recipe by Cathy Hatch

2-3 Avocados mashed
1/4 cup Xalapa Salsa 
1 Roma tomato diced
1/2 lime juiced
Sprinkle of salt (to taste)

1. Mash avocados then add everything else :)



Cilantro Lime Chicken Quesadilla 

1. Butter one side of each tortilla, place onto preheated skillet (medium heat)
2. Place evenly across base tortilla your choice of cheese
3. Spread your guac on top the cheese
4. Place sliced chicken breast down next 
5. Now the sauteed mushrooms
6. Thin layer of the rice
7. Top with second tortilla
8. Flip this hefty thing
9. Eat it up!

Remember, just because it didn't cost a fortune don't mean its not fancy or delicious. The heart and soul you put into all aspects of life is what measures its worth. Also, doing something solely for money is not lofty enough a goal!

Guy Kawasaki taught that money is not all its cracked up to be, learning this after he became significantly wealthy from his entrepreneurial company Garage Technology Ventures. He told a story about while he was studying at Stanford, he'd be playing basketball outside and watched at the beginning of the semester as parents drove up in their Porsche's, Ferrari's, and Mercedes to drop their kids off and think, "wow they've made it". "Someday i'm going to come back to this campus, driving up in a Porsche, then students will look at me and say wow I wish I were him".

Well now he's owned Porsche's, but the day he drove back onto campus, after putting in years of strenuous study at school and labor in the work field, he saw students playing basketball and said, "man I wish I were a student again".

Whatever you chase after, do it because you love it. Because you have passion for it! Not for the money. If you love it and change the world, you will be rich. The world can be as small or large as you make it by how you outreach and interact with others. But don't sell yourself short of the richness of life in following your passions.
