Hello World! I'm Heidi Hatch and I have Celiacs Disease.

Celiacs disease is a autoimmune disease that damages the small intestines. A variety of negative symptoms accompany this wonderfully high maintenance disease and is triggered by consumption of gluten, a protein found in wheat, barely, and rye. "Untreated Celiacs can lead to the the development of other autoimmune disorders like Type 1 diabetes, MS, dermatitis herpetiformis, anemia, heart disease, and cancer" (https://celiac.org/about-celiac-disease/what-is-celiac-disease/). Wahoo!!!

There is no cure for Celiac Disease, but as long as I avoid gluten like the plague and spend some quality time with Doctor David J Bilstrom at Bingham Memorial Hospital in Blackfoot Idaho, my lives good!!!

When I was first diagnosed I felt trapped by my limitation of foods I could eat. I was use to being a social eater but found that people that I could trust with my restrictive diet to not make me sick even became limited. I ate real healthy, active, and loved my life. It took a long time to get used to but I'm finally thriving with my illness and I'm 78% okay with my limitations.

In school 78% technically passing, but I really don't want to just pass through life, I want to dream big and live to make a difference! Which is why this year i'm started this blog and hopefully opening my own allergy friendly restaurant in my home state of Idaho, and hopefully one day across the United States. Let me tell you what cucumbers are delicious but 2 a day will not sustain the healthy active lifestyle I aspire to live and I know all my fellow GF buddies would love a good night on the town of no cooking with no worries!

SO consider this my first small step in living to make my dreams reality. I'll be sharing loads of recipes to support the Celiacs afflicted and help out those who seek to understand that gluten free dairy free stereotypical "JOYFREE"food is not sick nasty, and that its possible to still include your high maintenance dietary restricted friends and have a JOYFULL life!!
