Honey Mustard Buddha Bowl



There is so many blogs out there with so many delicious and impressive recipes. I'm all about that! "JOYFREE" restaurant will most definitely have some of those. However, when someone finds out I have Celiacs (aka no gluten) accompanied with a few other food allergies, it's immediately assumed I eat nothing but air and drink sunshine. So I want to include on this blog some of my staple simple meals, cause aint nobody got 3 hours to prepare one meal everyday!

Today's recipe of choice is one of those recipes! I came up with it when my roommates were preparing a feast of fried chicken, Japanese curry, and a whole bunch of other freaking delicious looking food that I couldn't eat. So I started throwing a few veggies on the grill, tossed a chicken breast into the oven, made up some rice, concocted a sauce... BAM Honey Mustard Buddah Bowl was invented.  

This recipe and really any Buddha bowl is the best because you can add or leave out whatever your heart desires. You can simplify or fancify your version depending on how much time you have and they all taste great! For example, making this recipe today I used brown rice, other days I have used diced butternut, cauliflower, or sweet potato as my rice. I didn't want to go out into the snow to grill my veggies so I sauteed them in MCT oil instead. I didn't have time to make my own sauce so I used a premade version from the store. Whatever floats your boat, i'm not offended. :)

HONEY MUSTARD BUDDHA BOWL -Serving Size: 1

1 Small chicken breast 
1/2 Cup Brown rice
1/4 Cup Broccoli
1/4 Cup Cauliflower
1/2 Large carrot
1/4 of a Zucchini 
1/4 of a Yellow squash
1/2 of a Avocado
2 Tbs. "Briannas Home Style Honey Mustard Dressing"
Little salt
Little pepper 
MCT Oil

1. Preheat oven to 350. 
2. Line a baking pan with foil, lightly grease
3. Throw some salt and pepper on the chicken then pour honey mustard dressing over top
4. Put another sheet of foil over the pan so the chicken stays moist.
5. Cook for 30 minutes. Turn chicken over. Reapply some dressing. Bake another 10 minutes.
6. Cook you up some rice on the stove, in a rice maker, instapot... however you'd like! *I always make extra for meal prepping.
7. Sautee', grill, or steam your veggies -not your avocado, that would be gross.
8. Dish up rice on bottom, then veggies, then cubed chicken. Top with another little drizzle of honey mustard and your avocado. Enjoy!


When you have passion for something don't be afraid to get some skin in it. We might scrape up that skin when things don't go quite like we planned, but that helps us come back with a vengeance, a determination to not give in. To often fear is the driving force behind actions we take, fear of rejection, failure, or no qualification stunts our growth in life when instead these intense and abnormal opportunities should be our motivation to change and fulfill our potential. Failure means were learning and growing closer to that potential. 

This whole restaurant thing is pretty intimidating. I'm getting my degree in exercise physiology with a minor in nutrition. I wasn't planning on running a business, I don't know the first thing about it! That's kind of the best part about life though, the constant change and new opportunities that each day brings. From the seminar Launching Leaders, six steps were discussed to channel these opportunities and obtain our dreams.

6. Prepare to serve and give back
